Converting AIFF to AAC trades detail for size, and the trade is permanent. Encode at the top of the 96 to 256 kbps range if the file will be edited again later. Size falls from about 21 MB per minute to around 1.3 MB per minute.
AIFF can carry sample rates up to 192 kHz, but AAC tops out at 96 kHz. High-resolution sources are resampled down on the way through.
This conversion buys reach. AAC is natively supported on 4 additional platforms compared with AIFF, which is usually the reason people convert in this direction.
This conversion moves the file toward a different purpose: AIFF suits studio editing, the Apple ecosystem, mastering, whereas AAC is chosen for streaming services, mobile playback, broadcast.
Tags do not transfer verbatim. AIFF stores them as ID3 chunk (limited) while AAC uses ID3v2 (limited in ADTS), so titles and artwork are remapped and unusual custom fields may not survive.
Converting AIFF to AAC means moving audio out of the IFF / AIFF container, introduced in 1988, and into ADTS / raw AAC, which arrived in 1997. The two were designed with different priorities, and that is what determines whether this conversion costs you quality, storage, or compatibility.
Developed by Apple in 1988, AIFF stores audio using PCM. That codec choice sets the upper bound on what any conversion can preserve.
AAC, from MPEG / Fraunhofer IIS and dating to 1997, uses AAC-LC, HE-AAC and plays natively on 6 of the six platform categories we track. That combination is usually why people convert into it.
