Converting WAV to AAC trades detail for size, and the trade is permanent. Encode at the top of the 96 to 256 kbps range if the file will be edited again later. Size falls from about 21 MB per minute to around 1.3 MB per minute.
WAV can carry sample rates up to 192 kHz, but AAC tops out at 96 kHz. High-resolution sources are resampled down on the way through.
This conversion moves the file toward a different purpose: WAV suits studio editing, mastering, sample libraries, whereas AAC is chosen for streaming services, mobile playback, broadcast.
Tags do not transfer verbatim. WAV stores them as RIFF INFO (limited) while AAC uses ID3v2 (limited in ADTS), so titles and artwork are remapped and unusual custom fields may not survive.
