This extracts the audio and discards the video entirely. The soundtrack inside a VOB file is typically AC-3, and it is re-encoded to PCM on the way out.
Expect a much smaller file. Video accounts for most of the bytes, so about 49 MB per minute becomes roughly 21 MB per minute of AIFF.
Choosing lossless AIFF means nothing further is lost, though it cannot exceed the AC-3 track stored in the source video.
Subtitles do not survive audio extraction, since an audio container has nowhere to store them.
When a video holds several audio tracks, the main one is extracted; alternate language tracks are not merged into the result.
Extracting AIFF audio from a VOB video pulls the soundtrack out of the DVD-Video (MPEG-2 PS) container and writes it as a standalone IFF / AIFF file. The video stream, which holds most of the data, is discarded.
Developed by DVD Forum in 1996, VOB carries MPEG-2 video and AC-3, DTS, LPCM, or MP2 audio. That combination sets the upper bound on what any conversion can preserve.
AIFF was introduced by Apple in 1988. It holds uncompressed audio (PCM) and plays natively on macOS and iOS.
