Core Audio Format is a container rather than a single codec, so what it holds depends on how the file was made. It can carry PCM, ALAC, AAC, Opus, which means two files with the same extension can differ in quality and size. Check the source before assuming which one you have.
If your source runs above 48 kHz, it will be resampled: MP3 cannot store the 192 kHz that CAF allows.
CAF supports up to 8 channels, MP3 up to 2. Surround material is folded down rather than carried through untouched.
