This extracts the audio and discards the video entirely. The soundtrack inside a M4V file is typically AAC, and it is re-encoded to PCM on the way out.
Expect a much smaller file. Video accounts for most of the bytes, so about 90 MB per minute becomes roughly 17 MB per minute of CAF.
Subtitles do not survive audio extraction, since an audio container has nowhere to store them.
When a video holds several audio tracks, the main one is extracted; alternate language tracks are not merged into the result.
Extracting CAF audio from a M4V video pulls the soundtrack out of the MPEG-4 (Apple variant) container and writes it as a standalone Core Audio Format file. The video stream, which holds most of the data, is discarded.
Developed by Apple in 2005, M4V stores audio using H.264. That codec choice sets the upper bound on what any conversion can preserve.
CAF, from Apple and dating to 2005, uses PCM, ALAC, AAC, Opus and plays natively on 2 of the six platform categories we track. That combination is usually why people convert into it.
