Note that Core Audio Format does not imply one specific codec. It can wrap PCM, ALAC, AAC, Opus, so the compression behaviour of the result depends on the codec chosen rather than on the extension alone.
This conversion buys reach. CAF is natively supported on 2 additional platforms compared with OGG, which is usually the reason people convert in this direction.
This conversion moves the file toward a different purpose: OGG suits game audio, open-source projects, web delivery, whereas CAF is chosen for iOS development, the Apple ecosystem, very long recordings.
Tags do not transfer verbatim. OGG stores them as Vorbis comments while CAF uses CAF metadata chunks, so titles and artwork are remapped and unusual custom fields may not survive.
Note that CAF is vendor-controlled where OGG is open, so plan for a player that supports it wherever the file ends up.
Converting OGG to CAF means moving audio out of the Ogg container, introduced in 2000, and into Core Audio Format, which arrived in 2005. The two were designed with different priorities, and that is what determines whether this conversion costs you quality, storage, or compatibility.
Developed by Xiph.Org Foundation in 2000, OGG stores audio using Vorbis. That codec choice sets the upper bound on what any conversion can preserve.
CAF, from Apple and dating to 2005, uses PCM, ALAC, AAC, Opus and plays natively on 2 of the six platform categories we track. That combination is usually why people convert into it.
