This extracts the audio and discards the video entirely. The soundtrack inside a M4V file is typically AAC, and it is re-encoded to MP3 on the way out.
Expect a much smaller file. Video accounts for most of the bytes, so about 90 MB per minute becomes roughly 1.7 MB per minute of MP3.
Subtitles do not survive audio extraction, since an audio container has nowhere to store them.
When a video holds several audio tracks, the main one is extracted; alternate language tracks are not merged into the result.
