Going from AAC to WAV locks in the quality you have now, it does not recover what was lost when the file was first encoded. That is still the right move before editing, because WAV will not add a second round of compression damage. Budget for the size jump: about 1.3 MB per minute becomes roughly 21 MB per minute.
This conversion moves the file toward a different purpose: AAC suits streaming services, mobile playback, broadcast, whereas WAV is chosen for studio editing, mastering, sample libraries.
Tags do not transfer verbatim. AAC stores them as ID3v2 (limited in ADTS) while WAV uses RIFF INFO (limited), so titles and artwork are remapped and unusual custom fields may not survive.
